One of my favourite things to bake are these simple but deeply indulgent Hong Kong-style butter cookies. These butter cookies are rustic, filled with comfort, therapeutic, and not fussy to bake. With only a handful of ingredients, no mixer, and very minimal effort, it always result in something decadently good.

If you have ever had it, these Hong Kong-style butter cookies are reminiscent of Jenny Bakery's butter cookies. I remember being introduced to Jenny Bakery’s butter cookies during a trip to Hong Kong more than ten years ago. My first taste of it left me thoroughly enamoured - I mean, I have had many butter cookies, but nothing came analogous to what now holds a special place in my heart. It was intensely buttery, not-too-sweet, tender and yielding, light but decadent all at once. It also tasted nothing like other piped cookies, its distinctive piquancy and textural contrast are particularly unforgettable.
